There's no simpler vegan meal than boiling up some whole-wheat pasta and slathering it in a tomato sauce.
Sadly, a lot of sauces are laden with sugar so more often than not you are better off making your own. With that said Salca have some up with a vegan pesto that has no sugar in it- just tomatoes and red peppers to give its sweetness.
Pasta and sauce has become a staple in our household because it's so easy to put together after a long day at work, so I welcome trying anything new of this ilk.
I generally have it plain but my hubby who isn't vegan can have some chicken and cheese mixed in with it which I just add at the end and we're both happy then. One jar did enough for two people and coated the pasta well and kept it moist. Pasta can often go rubbery if the sauce isn't wet enough but the sunflower oil in this pesto keeps it glazed and soft.
Unlike other pestos, this one has added tofu in it too which is great source of protein for vegans and something you can lack if you don't make a conscious effort to include it where you can.
With an authentic taste of Italy, it seems silly to spend all that time making it yourself when you can have something of this quality, made from only a few ingredients over your pasta.
If I don't eat pasta on an evening, it's a great thing to make up for lunch in bulk and divide it into Tupperware dishes to save me having to make something new every night for the next day. Of course the pesto stays fresh on the pasta for a few days so I don't have to worry about it perishing when I make it in large amounts.
Overall, I am really impressed with the product and would definitely buy it again- for ease and for flavour. All vegans are lazy sometimes and when you can buy a sauce sans sugar that whips up into a tasty meal in just 15 minutes- it hard to not give in.
