Watercress Power Salad

Using: Steve’s Leaves Baby Watercress & Little Leaves

Prep: 10 minutes

Cook: 15 minutes

Serves 2

What to put in:

75g quinoa

Zest & juice 1 lemon

2 tbsp extra virgin olive oil

400g can mixed bean salad, drained and rinsed

1 ripe avocado, diced

100g frozen edamame beans, defrosted

25g walnut pieces, toasted

1 tbsp chopped mint

60g pack Steve’s Leaves Baby Watercress & Little Leaves

What to do:

Cook the quinoa in boiling water for 15 minutes until tender, drain and cool under cold water.

Whisk the lemon zest and juice with the oil, season and toss into the quinoa with the mixed beans, avocado, edamame beans, walnuts and mint.

Toss gently into the watercress and little leaves and serve.
