Preheat oven to 180c

Ingredients
225g Dates
175ml Boiling water
Spices to taste - cinnamon, nutmeg
85g Olive oil
140g caster sugar
2 Very ripe bananas
175g Self raising flour
1tsp Bicarbonate of soda
75ml Non Dairy milk
25ml Baileys Almande
Method
You will need: a cupcake pan/individual cake tin (I used a mini bundt tin)
Soak the dates in the boiling water, with the spices. Leave to steep overnight (or as long as possible)
Cream the butter and sugar together until light and fluffy
Add the mashed ripe banana and beat to combine
Combine the flour and bicarb evenly, add to the mix and beat to combine
Combine the flour and bicarb evenly, add to the mix and beat to combine
Slowly add the milk, the mix will split but don't worry
Measure out scoops evenly and fill your pan almost, but not quite, to the top
Bake for 15-20 mins or until done
I served mine with Nonna's Gelato Baileys Almande gelato
