Ingredients
- 1 Bunch Organic Broccoli
- 1 Medium Potato
- 1 Small Red Pepper
- &34; Small Yellow Onion
- 2 Tablespoons Olive Oil
- 2 Cups Organic, Low-Sodium Vegetable Broth
- 1 Teaspoon Garlic, minced
- Sea Salt, to taste
- Pepper, to taste
- Directions
- Sauté the chopped onion, minced garlic, and red pepper in the olive oil just until they turn soft. Then cool for 5 minutes.
- Meanwhile, boil broccoli and potato until they're soft, but not too soft. Allow that to cool for 5 minutes, as well.
- Once the ingredients have cooled a bit, add them into your NutriBullet RX with the vegetable broth and extract until smooth. You can also split the ingredients in half and make the recipe in two batches. Add salt and pepper to taste.
