Banana and Almond Zoats with Pomegranate

Serves: 2

Ingredients:

500ml Alpro Almond Unsweetened

1 small courgette

1 ripe banana

90g porridge oats

A pinch of salt

½ a tsp. of mixed spice plus a little extra to sprinkle on top

Seeds from half a pomegranate

Honey to taste

Method:

- Prepare the ingredients by grating the courgette, then peel and mash the banana.

- Place the Alpro Almond Unsweetened, porridge oats, salt and mixed spice into a large saucepan over a medium heat, leaving a pinch of mixed spice to sprinkle on top.

- Add the grated courgette and mashed banana to the pan and simmer for 8 - 10 minutes until thick and creamy, stirring often.

- Serve the porridge by spooning into bowls, top with the pomegranate seeds, sprinkle over the remaining mixed spice and add a drizzle of honey.
