Ingredients:

o BFree Sweet Potato Wrap X 2

Sweet Potato Wrap with Quinoa and roasted veg

Sweet Potato Wrap with Quinoa and roasted veg

o ½ cup of uncooked quinoa

o ½ cup of Spinach

o Handful of Spinach

o Sundried tomatoes chopped

o Roasted red peppers chopped

Directions:

  • Cook the Quinoa by adding 2 cups of water. Bring to the boil and allow to shimmer for 15-20minutes until fluffy. Allow to cool. (Can cook with stock for additional flavour)
  • Spread the Hummus on both wraps
  • Chop the sundried tomatoes and roasted red pepper.
  • Spread sundried tomatoes and roasted red pepper on the wrap
  • Add the spinach!
  • Wrap and roll and enjoy your BFree wrap!
