Ingredients:
o BFree Sweet Potato Wrap X 2
o ½ cup of uncooked quinoa
o ½ cup of Spinach
o Handful of Spinach
o Sundried tomatoes chopped
o Roasted red peppers chopped
Directions:
- Cook the Quinoa by adding 2 cups of water. Bring to the boil and allow to shimmer for 15-20minutes until fluffy. Allow to cool. (Can cook with stock for additional flavour)
- Spread the Hummus on both wraps
- Chop the sundried tomatoes and roasted red pepper.
- Spread sundried tomatoes and roasted red pepper on the wrap
- Add the spinach!
- Wrap and roll and enjoy your BFree wrap!
