Serves 2
- 4 tbs of fresh lime juice
- 1 large chunk of fresh ginger
- 1 & 1/2 cup of fresh pineapple
- 1-2 tablespoons agave, optional
- 100ml light rum, optional
- Soda, to top up
- 6-8 mint leaves
Garnish with mint sprigs and lime wedges
Place the pineapple in a blender and puree until smooth.
Run the ginger through the Panasonic Slow Juicer MJ-L500. Add 2 tablespoons to the pineapple juice, or as much as you want to give it a fiery kick.
In a cocktail shaker, muddle the mint leaves and lime juice. Add the pineapple and ginger juice, rum (if using) and a couple ice cubes, and shake vigorously to combine. Have a taste and add a little honey, if you want it sweeter.
Pour into a cocktail glass filled with ice and top with soda.
Garnish with a fresh mint sprig and a couple of lime slices if you're feeling fancy.
