(Gluten Free, Dairy Free, Vegan)
Ingredients
3 cups water
1 cup pitted dates, chopped
2 cups Fig, Date and Coconut Vanilla Muesli
1 1/2 cups of rolled oats (or quinoa puffs for a gluten-free bar)
1 Tablespoon vanilla extract
1 T ground cinnamon
Method
Line a medium-sized slice dish with baking paper.
In a heavy-based saucepan, bring water to boil over a low heat. Add dates, stirring continuously, until the water is nearly dissolved and the dates begin to form a paste. You may need to add more water during this step to ensure dates are fully stewed. You are amazing for a soft, paste-like consistency.
Remove from heat, and mash out any lumps with a potato masher.
Allow date mixture to cool for 5 minutes, before adding all remaining ingredients. Fold through with a wooden spoon to combine.
Press mixture into prepared tin, and refrigerate for approximately two hours, to set.
Once set, cut into squares.
These satisfying bars are deceivingly good for you, making for an ideal breaky on-the-go or pre-workout snack.
