Vegan Apple, Orange And Walnut Rice

Ingredients:

200g brown rice

2 tbsp coconut oil

1 x star anise

Salt and pepper

Rind from a small orange – 2-3 strips

450mls boiling water

2 x red onions

30g walnut halves, lightly crushed

1tsp chilli flakes (optional)

100g Braeburn, skin on julienned

Method:

  • Soak the rice in water for at least 20 mins. Rinse well and add to a dry pan on medium heat to toast the grains dry for 1-2 mins
  • Add 1 tbsp of coconut oil, star anise, seasoning and orange rinds
  • Add 450mls boiling water and simmer for 20-25mins until the rice is cooked through
  • Meanwhile, sweat the onions in 1 tbsp coconut oil for 10-15 mins. Add the walnuts and chilli and stir for 2-3 mins
  • Toss through the apple for half a minute and transfer to the cooked rice pan. Fold through and serve
