Serves 4
Ingredients:
4 tbsp olive oil
1 chopped medium red onion
4 pressed garlic cloves
1 fresh red chilli (or 2 tsp dries chilli flakes)
1 tsp curry powder
2 tsp turmeric powder
150g Crazy Jack's Split Lentils
150g Crazy Jack's Chickpeas
1 can chopped tomatoes
2 peeled and chopped carrots
800ml-1L vegetable broth
Salt and pepper to taste
2 handfuls of greens (cavolo nero, spinach, etc.)
Method:
Warm the olive oil in a large pot over medium heat. Add the chopped onion and carrots and cook for roughly 5 minutes, stirring often. Add all the spices and cook for another minute. Add the chopped tomatoes and cook for another 5-10 minutes, again stirring often. Pour in the vegetable broth, lentils and chickpeas. Season with salt and pepper and bring the mixture to boil. Once it's boiling, reduce the heat and cook for another 30 minutes. Add the greens and cook for another five minutes. Let the soup set for 10 minutes before serving. Goes lovely with toasted soda or rye bread.
