This Asian-inspired vegan dish is packed with nourishing goodness. Our homemade peanut seitan is a great alternative to meat. It is soy-free and is packed with the flavours of the orient. Serve with crispy salad and delicately spiced caulirice.
To make the Satay Seitan:
140g Vital Wheat Gluten Flour
2 tbsp Nutritional Yeast Flakes
2 tbsp peanut butter
2 tsp Onion Powder
2 tsp Garlic Powder
2 tsp chinese five spice powder
1 tsp chilli flakes
1 tbsp Soya Sauce
Salt and pepper to season
Toasted Sesame Seed Oil
2 tbsp bouillon powder
150g boiling water.
To serve we used:
Lemon and chilli Caulirice
Lettuce
Spring Onions
Tomatoes
Avocado
Smooth Peanut Butter
Method:
- Preheat the oven to gas mark 6 and brush a non-stick baking tray with some of the sesame oil.
- Add the gluten flour, yeast flakes, onion powder, garlic powder, 5 spice, and chilli flakes to a bowl.
- Dissolve the bouillon in the hot water. Add two tbsp peanut butter and the soya sauce and stir until you have a smooth sauce.
- Pour the hot liquid into the dry ingredients and stir to combine to form a soft dough. Knead gently for a couple of minutes, ensuring that all the flour has been incorporated.
- Break the dough into bitesize pieces and lay onto your prepared tray. Brush with the remaining sesame oil and bake for around 30 minutes, turning the pieces over half way through.
- Serve with warmed caulirice and salad. Drizzle with more peanut butter and scatter chilli flakes liberally.
