Savoury Kale Pancakes

  • 60g curly kale
  • 250ml water
  • 1 chia egg (1tbsp chia + 3 tbsp water)
  • 120g of unflavoured Huel
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp mixed herbs
  • 4 garlic cloves
  • Pinch of pepper
  • Pinch of Chilli flakes

METHOD

  1. In a blender, blend kale and water, add chia egg, garlic and set aside.
  2. In a bowl, mix dry ingredients together. Add wet mixture in the dry ingredients and stir through. Let the batter sit for 5 minutes.
  3. Cook in ¼ - ½ cup portions in a lightly oiled pan over medium heat for about 2-3 minutes in each side.
  4. Makes about 10 smaller pancakes.
  5. Serve with red caramelized onion and natural glaze or marmite drizzle.
