For a snazzy twist on the classic peanut butter cup, try these vegan salted caramel and almond butter goodies from blogger Sunshine Susan. Deliciously decadent, these mouth-watering treats make the best use of our coconut oil, coconut sugar and agave syrup.
Makes 10 cups. Prep 20 mins. Freeze 1-2 hours
Ingredients:
Bottom layer
85g ground almonds
20g oats (Gluten Free if required)
1 tbsp The Groovy Food Company Organic Virgin Coconut Oil
1 tbsp almond butter
A dash of Himalayan Pink Salt, vanilla and cinnamon
Salted Caramel Layer
135g dates (soaked in hot water for 10 minutes)
2 tbsp The Groovy Food Company Light Amber & Mild Agave Nectar
3 tbsp melted coconut butter
20g The Groovy Food Company Organic Coconut Sugar
1 heaped tsp maca powder
A dash of vanilla and cinnamon
1/4 tsp of Himalayan Pink Salt
Chocolate Layer
4 tbsp The Groovy Food Company Organic Virgin Coconut Oil
4 tbsp cacao powder
2 tbsp The Groovy Food Company Light Amber & Mild Agave Nectar
A dash of vanilla extract
Method:
- Mix all the ingredients for the bottom layer in a food processor. If the mixture is too oily add more oats. Place 10 cupcake cases in a muffin tin and divide the mixture forming the flat bottom layer. Place in the freezer while you make the next layer.
- Mix all the ingredients for the salted caramel layer in a food processor. Add a couple or more tablespoons of the date water (that you soaked the dates in) until a caramel-like mixture is formed. Layer the mixture on top and return to the freezer.
- For the chocolate layer, gently heat up the coconut oil in a saucepan or a microwave, add the rest of the ingredients and mix well. If desired, add more agave. Layer approximately 2 tsp on top of each cup and return to the freezer to set for at least 1-2 hours or overnight.
These are best kept in a freezer and can until you eat them all.
