Pistachio and quinoa bites

Pistachio and quinoa bites

60g quinoa, rinsed

100g shelled pistachio, chopped

200g pitted prunes

2 tbsp agave

100g caco nibs or chocolate chips

  1. Preheat the oven to 180C/160C fan/Gas 4
  2. Spread the quinoa and pistachio nuts on a baking tray and place in the oven at180C for 10mins. Reduce the oven to 160C/140C fan/gas 3. Allow to nuts and quinoa to cool
  3. Place the prunes, agave and 3 tbsp water in a blender and puree. Spoon the prune mixture into a large bowl and mix with the quinoa, pistachios and cacao nibs.
  4. Line a 20cm square tin with greaseproof paper, spoon the mixture into the prepared tin and bake for 20mins.
  5. Allow to cool in the tin for 15mins, then cut into 12 slices.
