Layered Salad

Serves: 6

Preparation time: 15 minutes

  • 2 medium carrots, grated
  • 2 yellow peppers, thinly sliced
  • 100g baby spinach leaves
  • 4 medium tomatoes, sliced
  • ½ cucumber, sliced
  • 60g pack mixed seeds (available in the snack section in supermarkets)

Dressing:

  • 100ml Olive oil
  • 50ml White wine vinegar
  • 1-2 Tsp Wholegrain mustard
  • Pinch sugar
  • Salt and pepper to taste

Ingredients:

Method:

  1. Layer up the vegetables in the Pyrex bowl and scatter the seeds over the top.
  2. Prepare the dressing by mixing all of the ingredients together in a jar, shaking really well. Serve with the salad.
