Serves 4-6
Ingredients
- 1 unripe, firm mangoes, flesh only, chipped into roughly crisp-sized slices
- 1 Bramley apple, cored and quartered and finely sliced
- 1 ½ tbsp. rapeseed oil
- 1 tbsp lime juice
- ½ tsp Encona West Indian Original Hot Pepper Sauce
- 2 large cloves garlic, crushed
- 1 tbsp finely chopped coriander leaves
- 1 tbsp white wine vinegar
- sea salt and freshly ground black pepper
Method
- In a bowl, whisk together the oil, lime juice, Encona West Indian Original Hot Pepper Sauce, garlic and coriander and season to taste.
- Add the mango and apple. Leave to sit and soak in flavour for 15 minutes before eating.
