Green Mango And Sour Apple Chow

Serves 4-6

Ingredients

  • 1 unripe, firm mangoes, flesh only, chipped into roughly crisp-sized slices
  • 1 Bramley apple, cored and quartered and finely sliced
  • 1 ½ tbsp. rapeseed oil
  • 1 tbsp lime juice
  • ½ tsp Encona West Indian Original Hot Pepper Sauce
  • 2 large cloves garlic, crushed
  • 1 tbsp finely chopped coriander leaves
  • 1 tbsp white wine vinegar
  • sea salt and freshly ground black pepper

Method

  1.  In a bowl, whisk together the oil, lime juice, Encona West Indian Original Hot Pepper Sauce, garlic and coriander and season to taste. 
  2. Add the mango and apple. Leave to sit and soak in flavour for 15 minutes before eating.
