Green Bean Pilaf

Green Bean Pilaf

225g Green beans (sliced diagonally)

1 tsp Dried coriander

10ml Extra virgin olive oil

10g Garlic puree

900ml Water

120g Leeks (finely chopped)

100g Onions (finely chopped)

2 Vegetable stock cubes

20g Pine nuts

Brown Rice 280g

Cook off the rice in the water with the stock cubes added. Cook the rice till tender but not mushy.

Fry off the onions, leek, garlic and spices and add the green beans. Mix everything together with the rice and place the pine nuts on top.

Blackeye Bean Salsa Serves 8 as a side dish

 

5g Garlic puree

25ml Lemon juice

5g Fresh coriander

4ea Spring onions (finely chopped)

200g Cherry tomatoes (halved)

400g Blackeye beans

 

Rinse and drain the beans thoroughly and then chop the onions, and cherry tomatoes and coriander.

Place everything in a bowl and add the garlic and lemon juice.
