Strong Roots have come up with a range of delicious vegan recipes so we just had to share one with our readers!
Ingredients:
1/2 small head cauliflower
500g Strong Roots Garlic Roasted Sweet Potato
50ml extra virgin olive oil
100g mint
1 lemon juice and zest
60g flaked almonds toasted
1 pomegranate seeded
Salt and pepper
Method:
1. Preheat the oven to 200 C.2. Arrange Strong Roots Garlic Sweet Potato on a single layer on a oven tray.
3. Bake for 23 minutes.
4. Break up the cauliflower and pulse it in a food processor until it resembles rice or grate on a box grater.
5. Toss all the ingredients together and season with salt and pepper
6. Serve
