Creamy Hummus with a Mediterranean Twist
Serves: 3-4
Ingredients:
6 tbsp Alpro soya alternative to yogurt with Almond
3 tbsp lemon juice
1 garlic clove (crushed)
2 tbsp tahini
3 tbsp extra virgin olive oil (plus a little extra for drizzling)
400g chickpeas (drained)
1 handful of parsley (chopped flat leaf)
1 tbsp almonds (toasted and flaked)
Pinch of salt and pepper
Pinch of paprika
Method:
- Drain the chickpeas and rinse under cold water.
- Add the chickpeas to a food processor along with the Alpro Plain with Almond, lemon juice, garlic and tahini.
- Turn the food processor on and slowly pour in the extra virgin olive oil. Process until smooth and season to taste.
- Sprinkle over the toasted almonds, paprika and flat leaf parsley. Finish with a swirl of extra virgin olive oil.
