Raw Vegan Ginger Coconut Cookie Bites with Salted Caramel Frosting

These easy to make raw cookie bites are the perfect mix of naughty and nice.

Serves: Makes 10 cookies

Takes: 15 minutes, plus cooling

What you need:

50g rolled oats

50g hazelnuts

50g desiccated coconut

1 tsp ground ginger

6 Medjool dates

1 tbsp water

2 x 125g Salted Caramel COYO

4 tbsp coconut oil

1 tbsp maple syrup

Stem ginger, for topping

What you do:

In a food processor, blitz the oats, nuts, coconut and ginger with the fresh Medjool dates and water until a mixture starts to come together.

Divide the mixture into equally sized balls, spread out on a tray and flatten slightly. Place in the fridge until ready to top with frosting.

Make the frosting. Melt the coconut oil over a medium head and add the tubs of salted caramel coyo and maple syrup. Remove from heat once fully combined, wait until completely cooled, then spread over the cookies.

Top with stem ginger and extra desiccated coconut.
