Chilled Vegan Chocolate Covered Salted Caramel Nutty Bites

These nutty bites are filled with natural energy to keep you going and taste delicious as well.

Serves: Makes 8-10 Bites

Takes: 8 minutes, plus chilling

What you need:

150g mixed nuts (we used almonds, walnuts, brazil nuts and pistachios

150g mixed dried fruits (we used sultanas, raisins, dried cranberries and goji berries

2 tbsp coconut oil

4 tbsp peanut butter (we used Meridian)

1 x 125g tub Salted Caramel COYO

Melted chocolate (Vegan)

What you do:

On a low heat melt the coconut oil and peanut butter together until smooth. Add the nuts and fruit, stir until combined and take off the heat.

Stir in the yoghurt and spoon into individual bite size portions on a baking tray. Put in the freezer to set.

Drizzle with melted dark chocolate, allow to set, then store in an airtight container in the fridge until ready to eat.
