Vegan Chocolate Oil Cake
Sorry I missed you all last week but I haven't been very well, of what I thought was flu has turned into a nasty virus. It came to a heads when it turns out I have an allergy to the antibiotics I was put on so not a great few weeks! Anyway we are into our first week of December and I couldn't be more excited for Christmas to come! We were supposed to be in Budapest but have decided to stay at home with the family. Copenhagen, wow what an amazing city! It has never really been on my list of places to go but when my sister said she was organising a surprise trip for her husband's 40th I thought well that fits in perfectly with my fiancée turning 30th and my parents were also coming!
So we headed from all different ends of the country and met in the wonderful Copenhagen. We stayed at the Nimb Hotel, voted the worlds most luxury boutique hotel in the world in 2015 and wow you can see why. First of all, the hotel is totally immaculate, the staff are incredibly helpful, nothing is ever too much trouble for them, the hotel rooms are stunning, they overlook the Tivoli Gardens where the famous Christmas Markets are and they all have huge living and bathroom space, along with open fires that the staff will light for you.
The food out there was amazing, I was actually really surprised and there is a Vegan and paleo specific restaurants to choose from. The food in the hotel was incredible, breakfast every morning had a buffet selection which included many gluten free, vegetarian and vegan options. You could also order hot food like avocado on toast and omelets which were amazing and beautifully presented. Two of my favourite places to eat are below:
The Union Kitchen
This place is so busy you have to book as the queue was coming out of the door on both occasions' we went, the first time we were unsuccessful without a booking! A really young and buzzing restaurant serving lots of delicious food including waffles. There isn't actually too much on there for people who are gluten free but I did have the goats cheese salad which was really delicious and just what I wanted, would recommend a visit here.

Save the best till last, by far my favourite meal, not only was nothing too much trouble for our lovely waiter who I believe was also the owner, but the food was so tasty! He also made everything gluten free including some special chips! They are well know for their own sandwiches so instead of bread he gave me some special thin chips. They have an amazing beer garden out the back with a huge open fire which is a great place to hang out with friends and get a drink. I had the salmon mousse open sandwich and it was amazing, topped with pickled beetroot and avocado, I don't know how they got the flavours so tasty and delicious but it was. Would have loved to have gone back and will do on my next visit.
