Wave goodbye to the cream crackers and flatbreads currently sitting in your cupboard, and hello to these scrumptious squares. Temptingly crunchy, these seedy crackers are ready to be spread with your favourite toppings.
Preparation time: 1 hour
Makes: 16 crackers
You’ll need:
100g California walnuts
2 sheets of nori seaweed
80g chia seeds
200g omega seed mix
1 cup of water
Salt
Method
Preheat the oven to 170°C.
Place the California walnuts and nori seaweed into a food processor and blitz until you have a fine meal. Mix the walnut mixture with the chia seeds, omega seed mix and water. Season with a little salt and leave for 15 minutes
Tip the mixture out onto a large, lined flat baking tray and spread out into a thin, even layer using the back of a metal spoon.
Place into the oven, and after 20 minutes remove and cut into roughly 16 squares with a sharp knife. Place back in the oven for a further 30 minutes. Break up the squares, leave to cool and store in an air tight container.
