Brown Rice Pudding with Fig Compote
Serves: 4
Ingredients:
750ml Alpro Almond Unsweetened
1 vanilla pod
200g brown rice
5 tbsp. date syrup
200g dried figs
1 tsp. cinnamon
4 tbsp. tahini
4 tsp. agave
40g toasted flaked almonds
Method:
- Prepare the vanilla pod by splitting in two, scraping the seeds out using the tip of a knife.
- Place the Alpro Almond Unsweetened, brown rice, date syrup, vanilla seeds and pod into a saucepan and bring to the boil.
- Reduce to a low heat and simmer until all the liquid is absorbed.
- Meanwhile, place the figs, cinnamon and water into a saucepan, bring to the boil, then reduce the heat and simmer for 30- 35 minutes until the figs are soft and sticky.
- Spoon the rice pudding into bowls and top with the fig compote.
- Decorate with a drizzle of tahini and agave and sprinkle with the toasted flaked almonds to serve.
