Why not try this new vegan recipe- it's light and colourful and ideal for the Spring.
Ingredients
- Del Monte Gold pineapple
- 2 avocados
- 2 bunches watercress
- 1 red onion, thinly sliced
- For the dressing: 2 garlic cloves, thinly minced, olive oil, fresh lime juice, 1/2 tbsp cumin, salt and pepper
Method
- Heat up grill. Once hot, put the pineapple slices on grill and cook for 3-5 minutes on both sides. Remove from pan then cut into pieces.
- Prepare the dressing: Place the garlic, olive oil, vinegar or lime juice, cumin, salt, and pepper in a small bowl and whisk to combine. Taste for seasoning. Set aside.
- Peel the avocado then cut into pieces. In a large bowl, toss the watercress salad with the pineapple, avocado, red onion, then add the dressings. Serve into plates and enjoy!
