Kick start your day with a fresh juice! This recipe, developed by food blogger Rawberry Fields, combines earthy beetroot with sweet Pink Lady® apple and is finished off with an extra kick from ginger and lemon juice. Delicious!

Vegan Pink Lady® Apple, Beetroot and Ginger Juice

Makes half a litre

10 minutes to prepare

What you'll need:

3 - Pink Lady® apples

1 - large raw beetroot (approx. 200g)

Small piece ginger (about 2cm long)

1 - small carrot

Squeeze of fresh lemon juice

Half a pomegranate

What to do:

- Trim the ends off the beetroots before lightly peeling.

- Peel and core the Pink Lady® apples, and peel the carrot. Then remove the skin from the ginger.

- Place the beetroots in the juicer first and blend following the manufacturer's instructions.

- Then juice the apple, the carrot and the ginger and pomegranate seeds, before adding the lemon.

- Serve with ice.
