Deciding what to feed your baby can be challenging, especially as many parents strive to give their little one yummy and nutritious treats. To help you out, Organix shares three healthy, delicious and fun recipes that are easy to prepare and tasty too.

Minty Pea and Leek Risotto

Occasion: Lunch/dinner

Ingredients:

50g organic arborio rice

50g finely chopped organic leeks

50g small organic peas

Sprinkle organic dried or fresh mint

1 finely chopped organic garlic clove

1 tablespoon organic olive oil

1 knob organic unsalted butter

1 tablespoon organic cream cheese or grated organic cheese

300ml water

Instructions:

Step 1 - Heat the oil in a medium saucepan and add the leeks and garlic and fry until softened.

Step 2 - Add the dry rice and fry for approximately two minutes.

Step 3 - Gradually add a little (approx 100ml at a time) of the water stirring all the time. With each addition, wait until the rice has absorbed all the water before adding any more.

Step 4 - Add the peas with the last addition of water.

Step 5 - Once the rice is soft and has absorbed all the water, add the mint and stir in the butter, cream cheese/grated cheese to give a silky texture.

Step 6 - Mash or whizz in a blender to suit your baby's texture requirements - if you need the rice to be sloppier, then just add some milk.

Liver Casserole

Occasion: Lunch/dinner

Ingredients:

8 small slices (80g) of organic Chicken or Lambs Liver

1/4 pint organic milk, for soaking

1 tbsp organic plain flour (or corn flour for a gluten free option)

1 tbsp organic olive oil (or sunflower oil, or butter)

1 tbsp organic tomato puree

1/2 tsp organic mixed spice

A sprinkle of organic ground black pepper

1/2 organic onion, finely diced

1/2 organic red or yellow pepper, finely diced

2 organic mushrooms, sliced

1 medium organic carrot, finely diced

The cooking water from the potatoes (approx 1/4 pint)

Mashed potato made from one organic medium potato

Instructions:

Step 1 - Make sure the liver is free from any vessels (these will not be very pleasant for your baby as they are difficult to chew and will not blend very easily).

Step 2 - Soak the livers in milk to absorb the bitter flavours half an hour before cooking.

Step 3 - Mix the black pepper and mixed spice with the flour and roll the liver in the mixture.

Step 4 - Heat up the oil in a pan and add the onions, pepper, carrots and mushrooms and sauté until slightly brown.

Step 5 - Add the tomato puree and some of the cooking water from the potatoes.

Step 6 - Add the liver to the pan and cook for a further 10 minutes, making sure the liver doesn't dry out.

Step 7 - Spoon the mixture from the pan into a blender and blend to a smooth paste.  Add the mashed potato to the mixture and puree. Use more water to thin the mixture if you need to.

Porridge with Fruity Compote

Occasion: Breakfast

Ingredients:

1 medium organic apple (small bite size pieces)

1 organic pear (small bite size pieces)

3 large organic dates (diced into small raisin sized pieces)

Large handful of mixed dried fruit - we used 2 mini bags Organix apricot and raisins

1 organic orange, zest and juice (could be replaced with water)

1 pinches organic ground cinnamon

1 tsp vanilla extract

freshly grated organic nutmeg

2 organic cloves

For the porridge:

55 g organic porridge oats

500ml organic full fat milk

½ tsp organic vanilla extract

Instructions:

Step 1 - For the compote: Place all the ingredients in a pan and simmer until the fruits are tender.

Step 2 - For the porridge: Combine the oats, milk vanilla extract in a pan and stir over a medium heat until thick.

Step 3 - Serve the porridge with the warm winter fruits spooned on top.

Serving suggestion: Compote can also be served with yoghurt. Puree the porridge and compote to the desired texture for younger babies.
