Cooking healthy, delicious, heart warming meals in the winter doesn't have to be a chore.
Although risotto might look whiter than white, the calories in this warming winter classic can add up.
We’ve asked Executive Chef & Head of Innovation for the Morrisons NuMe range, Neil Nugent for his top tips on keeping your risotto guilt free this winter.
- Use splilt grains instead of rice for a lighter, fluffy texture
- Don’t overcook your vegetables, add in at the last minute to retain their vital nutrients
- Season with pepper to avoid over salty food, it’ll still have flavour and bite this way
- Add cream cheese instead of Parmesan, NuMe extra light soft cheese has 80% less fat than the standard equivalent
- Add chicken for a protein hit that’s also low in fat.
