Perfect with Pimms, these colourful ice cubes not only look gorgeous but add colour and flavour to any Summer drink.
Makes: 12 ice-cubes
Preparation time: 10 minutes, plus freezing

You’ll need:
100g small Sweet Eve strawberries, hulled and quartered
small handful fresh mint leaves
3 cm length cucumber, cut into small chunks
cold water
What to do:
Divide the strawberry slices between a 12 hole ice cube tray.
Add a couple of mint leaves and some cubed cucumber to the strawberries. Cover with cold water and freeze until solid.
Transfer the ice cubes to a freezer bag. Seal, label and freeze for up to 6 months.
