Strawberry daiquiris are the perfect summer cocktail and at the moment they are even more fitting as they will be great to celebrate Wimbledon with.

Strawberry Daiquiri
Ingredients:
3-4 strawberries
15 ml simple syrup
50 ml Zacapa 23 rum
30 ml fresh lime juice
A few dashes bitters (preferably orange bitters)
Super fine sugar, for rimming the glass
Method:
Gently coat the rim of a cocktail glass with a lime wedge. Cover a saucer with a thin layer of super fine sugar and roll the outer rim of the cocktail glass through the sugar. Set aside.
In a cocktail shaker, muddle the strawberries with the simple syrup until well pulverised.
Add the rum, lime juice, and bitters to the shaker.
Add a couple handfuls of ice to the shaker, cover, and shake vigorously for 15-20 seconds.
Use a Hawthorne strainer to strain the cocktail into the prepared glass. This type of strainer will allow some of the berry pulp into the cocktail to create an interesting texture and flavour.
