Ingredients
8 oz. bacon, chopped
1/4 cup all-purpose flour
1/2 tsp. salt
3 lbs. beef stew meat, cut into bite-sized pieces
3 large carrots, chopped (about 2 cups)
1 large onion, chopped (about 1 cup)
12 oz. stout beer
1/3 cup firmly packed dark brown sugar
1/4 cup FRENCH’S® Classic Yellow® Mustard
Directions
1. Cook bacon in large skillet over medium heat until crisp. Remove bacon and set aside.
2. Combine flour and salt and toss beef with flour mixture. In same skillet, in reserved bacon drippings, brown beef over medium heat in batches.
3. Arrange carrots, onion, and cooked bacon in slow cooker, place browned beef on top. Combine stout, brown sugar and Mustard and pour over beef.
4. Cover and cook on Low 8 to 10 hours or High 4 to 6 hours or until beef is very tender. Serve beef over mashed potatoes, rice or creamy polenta.
