This tasty Seafood Paella is a great way to cook an impressive meal, the simple way.
Serves: 4
Preparation Time: 5 minutes
Cooking Time: 20 minutes
Ingredients:
- 1tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, finely chopped
- 300g paella rice
- 1tsp smoked paprika
- 400g can of cherry tomatoes
- 775ml fish or vegetable stock
- 2 x 110g can of steam cooked mackerel fillets, drained
- 60g can of smoked mussels, drained
- 100g frozen peas
- Fresh lemon wedges to serve
Method:
- Heat the oil in a deep sided frying pan, wok or large shallow pan.
- Add the onion and fry until soft, add the garlic and continue frying for one minute.
- Add rice, fry for a minute until well coated with the oil and add paprika.
- Stir in tomatoes and stock.
- Bring to the boil, leave uncovered and simmer for 15 minutes or until the rice has absorbed all the liquid.
- Stir in mackerel, mussels and frozen peas, gently heat through.
- Serve immediately with wedges of lemon.
Hints and Tips: Try replacing the mackerel with canned salmon.
