Salted Toffee Apple Bake by Kerstin Rodgers

Ingredients

  • 50g butter
  • ½ a lemon
  • 4 South African apples, quartered and cored
  • 125g soft brown sugar
  • 125ml double cream
  • Sea salt

Method

  • Preheat the oven to 200ºC, fan oven 180°C, Gas Mark 6
  • Choose a baking tray that has edges (measuring approx. 20x30cm) or use a large shallow baking dish, and smear with the butter. Add the lemon juice, and then arrange the apples on top.
  • In a small bowl, mix together the brown sugar and cream. Pour it into the baking tray.
  • Bake in the middle of the oven for 20-25 minutes. (Take care that the apples don't become too soft).
  • Remove from the oven and scatter with a few pinches of sea salt. Serve with crème fraiche or vanilla ice cream.

* Cook's tip: A combination of South African Granny Smith and Pink Lady apples work well in this recipe
