Now that Wimbledon has started we want recipes that are quick to prepare, but still filled with plenty of flavour. Here we have two delicious recipes that are sure to tickle your tastebuds.
Leggera Summer Salad – gluten free and only 315 calories
Having launched several hugely successful low-calorie salads over the past 12 months as part of its Leggera range, a new 315 calorie salad has joined the menu for a limited time only. To carry on enjoying the dish at home, Master Pizzaiolo at PizzaExpress, Antenor Siqueira, has shared his recipe.
The salad matches sweet strawberry and juicy blueberry with the tart vinaigrette of PizzaExpress’ Light House Dressing. Despite being so low in calories, it’s a substantial salad with torn pieces of chicken and goat’s cheese served on a bed of seasonal mixed leaves and made all the more flavoursome by the small but very important addition of mint and basil.
As a classic accompaniment to chicken dishes, pancetta can be added, taking this super salad to a modest 383 calories and giving it a real ‘wow’ factor.
Ingredients
60g mixed season leaves
15g rocket
Small handful of mint leaves (torn in half)
30g PizzaExpress Light House Dressing
3 strawberries (sliced)
35g goat’s cheese (torn into pieces)
Small handful of blueberries
Quarter of a cooked chicken breast (torn into pieces)
A small handful of basil leaves
Pinch of black pepper
Method
- Place a layer of mixed seasonal leaves and peppery rocket on a large plate, followed by the mint.
- Drizzle over the leaves a dash of dressing.
- Place on top the goat’s cheese then sprinkle over the blueberries
- Next arrange the chicken on top of the other ingredients before adding slices of strawberry
- Add a final layer of basil leaves
- Finish with another drizzle of dressing and a pinch of pepper.
Strawberry and Cream Glory
It’s not summer in Britain until you’ve enjoyed some strawberries and cream. Celebrating this classic combination, PizzaExpress is serving vanilla and strawberry gelato with fresh cream, fresh strawberries, and mint in the form of a Strawberry & Cream Glory. It’s available at PizzaExpress until 31 August.
Ingredients
2 scoops strawberry gelato
1 scoop vanilla gelato
2 strawberries (cut into quarters)
20g double cream
1 sugar curl
Sprig of fresh mint to finish
Method
Place the strawberry and vanilla gelato in the bottom of a sundae glass, top with fresh strawberries, pour over the cream and finish with a sugar curl and a sprig of mint.
