Good Natured Crunchy Thai Salad
Serves 4
Ingredients
1 tbsp sunflower oil
1 tsp sesame oil
½ tsp soft brown sugar
2 tsp fish sauce
juice of 1 lime
1 cucumber, deseeded and cut into matchsticks
2 carrots, peeled and cut into matchsticks
150g bean-sprouts
125g mangetout, shredded
1 red chilli, deseeded and finely sliced
2 tbsp chopped coriander
2 tbsp chopped mint
50g salted peanuts, chopped
Method
1. Whisk together the sunflower oil, sesame oil, brown sugar, fish sauce and lime juice, until the sugar has dissolved.
2. Place the cucumber, carrots, bean-sprouts, mangetout, chilli and herbs in a bowl and toss with the dressing.
3. Divide between four bowls and serve sprinkled with chopped peanuts.
