Smokey Chipotle and Bourbon Pork Ribs
The subtlety of smoked chipotle peppers blends perfectly with the Bourbon to create the ultimate sauce for authentic American ribs - sweet and finger licking sticky.
Cooking time: 1hr 45 minutes
Serves: (circa 8 ribs)
Ingredients:
1 Kg pork ribs
1 bottle Tabasco® Chipotle and Smokey Bourbon Sauce and marinade
Method:
Pour ¾ of the bottle of Tabasco® Chipotle and Smokey Bourbon Sauce over the ribs and marinade for a minimum of 2 hours (preferably overnight). Place on baking tray or in a roasting dish and cover with foil. Cook for 1.5 hours in a preheated oven (180oc).
Remove foil add the remaining sauce and cook for a further 15 minutes or until sticky and slightly crispy. Separate the ribs and serve.
Gourmet Chipotle and Cola Burger with Monterey Jack Cheese
Tabasco® has taken the sweet flavour of cola soft drink and combined it with the smokiness of Chipotle peppers to create a deliciously rich sauce, that’s incredibly moreish. Try it on hotdogs too!
Cooking time: 15 mins
Serves: 6
Ingredients:
For the burger:
500g minced beef
1 medium onion, finely diced or grated
70g breadcrumbs
60g Tabasco® Sweet Chipotle & Cola Sauce
Pinch of salt
1Tbsp vegetable oil
For the onion rings:
Vegetable oil for deep frying
300g self-raising flour + extra to dust
200g sparkling water
2 medium onions, peeled and sliced in rings, 1cm thick
Sea salt for sprinkling
Salt and pepper to taste
To assemble:
6 dessert spoon mayonnaise
1 beef tomato, sliced
1 Baby Gem lettuce
6 dessert spoon Tabasco® Chipotle and Cola Sauce and Marinade
6 burger buns (brioche if available)
6 sliced Monterey Jack Cheese
Method
Mix all the ingredients for the burger together and divide into 6 patties. Place in the refrigerator for at least an hour. Fry the Burgers over a medium heat for 6-8 minutes, turning halfway through to ensure they are browned on both sides (for BBQ turn half way through). Place on a baking tray and transfer to a preheated oven at (180oc for 10-15 minutes or until cooked thoroughly). Pour the oil into a heavy based pan and heat to 180oc (the pan should be no more than 1/ 3 full). Whisk together the flour and water to form a batter and season with salt and pepper. Coat a small batch of onion rings in batter. Lower into the hot oil and deep-fry until crisp and golden (about 2 - 3 minutes). Remove with a slotted spoon and place on a piece of kitchen towel to drain.
Repeat with the remaining onions and batter. Once cooked, sprinkle with sea salt.
To assemble the burgers;
Toast the bun
Spread the base of the bun with mayonnaise
Add 2 leaves of lettuce
Add a slice of tomato
Add Burger
Add Cheese
Add Onion Ring
Spread the top bun with Tabasco® Sweet Chipotle & Cola Sauce
Place bun on top
Repeat for remaining burgers
Creole Chicken Wings
Transform chicken wings and veggie burgers with a vibrant blend of herbs and spices to reflect the diversity of flavour in Louisiana.
Cooking time: 45 minutes

Ingredients:
1 Kg chicken wings
1 bottle Tabasco® Deep South Creole Sauce and Marinade
Method:
Pour ¾ bottle of Tabasco® Creole Sauce and Marinade on the wings and marinade for a minimum 2 hours (preferably overnight). Place the wings on a baking tray or in a roasting dish and cook in a preheated oven at 180oc for 35-40 minutes or until they are sticky and a bit crispy. Toss the wings in the remainder of the sauce and serve immediately.
Habanero Halloumi Skewers
The Tabasco® Fruity and Fiery Habanero Sauce and Marinade is an exotic infusion of hot Habanero peppers, sweet mango, banana and papaya. It delivers a blast of hot chilli that’s great for dipping or marinating and brings a classic taste of the Deep South to veggie skewers.
Cooking time: 10 minutes
Serves: 4
Ingredients:
4 red onions cut into big chunks
4 red peppers cut into similar size chunks
4 green peppers cut into the same size chunks
2 Packs of halloumi
1 pack of cherry tomatoes
1bottle of Tabasco® Fruity & Fiery Habanero Sauce and Marinade
Method:
Thread vegetables and halloumi on a skewer alternating the ingredients e.g. red onion, halloumi, red pepper, prawn, green pepper, cherry tomato etc. (whatever looks best). Place in a dish and pour over the sauce so they’re covered evenly. Leave to marinade for a couple of hours. Cook on a BBQ or under the grill turning frequently until cooked.
