The sun is shining and there is no better way to take advantage of it than to have a picnic.
If you’re looking for fresh and healthy picnic recipes then why not try this haloumi and spinach salad? It’s super tasty and easy to make.
Here’s everything you’ll need to make it.
Haloumi and Spinach Salad
Ingredients:
1 block of haloumi sliced
1 bag spinach
1 punnet tomatoes
½ red onion finely sliced
Handful of mint leaves
1 tbsp Gourmet Garden Parsley
50ml honey
4 tbsp white wine vinegar
2 tbsp olive oil
Cracked black pepper
Method:
1. Preheat oven to 200°C, add oil to baking tray then place cherry tomatoes and a pinch of salt. Bake tomatoes for 20 minutes or until starting to get soft
2. Either fry haloumi strips or grill until golden brown. Place on plate with the spinach and onion
3. To make the dressing whisk honey, chopped mint and Gourmet Garden Parsley in a small bowl. Whisk in vinegar, oil and cracked pepper. Test and adjust depending on flavour preference – sometimes we like a little extra honey!
4. Toss Spinach, haloumi and onions with the tomatoes and dressing. Serve.
