Pasta With Scallops And Rocket

You don’t have to be in a restaurant this Italian Food Day on 13th February to experience those much loved Italian food flavours. Very Lazy has designed some ‘delizioso’ Italian themed recipes for you to enjoy in the comfort of your own home.

Italian food is known for its delicious garlic and chilli flavours and what better way to experience these than with the Very Lazy pre-prepared chopped ingredients. Cut out the hassle of chopping and spend more time enjoying the delicious dish. Bravissimo!

Serves:  2
Takes: 10-15 minutes

Ingredients:

200g linguine or spaghetti
4tbsp extra virgin olive oil, plus a splash for frying
10 fresh shelled scallops
2tsp Very Lazy Red Chilies
2tsp Very Lazy Chopped Garlic
Zest and juice 1 lemon
Handful fresh rocket

Method:

1. Cook the pasta according to pack instructions

2. Heat a non-stick frying pan with a splash of oil and fry the scallops for 1-2 minutes, until golden, then turn and cook for a further 1-2 minutes

3. Remove to a plate and keep warm

4. Add the oil to the pan with the chilies, garlic and lemon zest
Gently warm through, then add the drained pasta, half the lemon juice and the rocket and season with salt and black pepper

5. Divide the pasta between 2 bowls and top with the scallops. Squeeze over the remaining lemon juice and grind over some extra black pepper

Tip: 1 level tsp of Very Lazy Garlic, which is equivalent to 1 large clove - and there are no smelly hands! Add to stews, stir-fries and salsas for an instant garlic hit... yum!
