Pancakes are super versatile, you can have pretty much anything in them but it’s usually the most traditional that win our hearts.
Jif have created this banana pancake for us to have a go at this Pancake Day so get your kitchen at the ready for some seriously fun baking.
Here’s what you’ll need and how to make it –
Banana Pancakes
Makes: 12
Prep Time: 5 minutes
Cook Time: 5 minutes
Ingredients:
For the pancake mixture:
110g/4oz plain flour, sifted
Pinch of salt
2 eggs
200ml milk mixed with 75ml water
50g/2oz butter
½ teaspoon ground cinnamon
Filling:
85g (3 oz) margarine or butter
85g (3 oz) muscovado sugar
4 bananas, sliced
1½ tablespoons Jif lemon juice
Chopped nuts, to decorate
Method:
1. Add all of the pancake ingredients to a bowl and whisk up until smooth (don't worry about any lumps as they will eventually disappear) then add in the cinnamon
2. Heat a little oil in a frying pan until fairly hot. Pour a little batter into the pan and tip to spread the batter evenly. When the underside is golden brown, toss over and cook the other side. Lift out and keep warm. Repeat with the remaining mixture to make 12 pancakes
3. For the filling, melt the butter in a pan, add the sugar and heat gently until dissolved. Don't worry if the mixture separates, with stirring and boiling it will become smooth
4. Add the bananas and Jif lemon juice and heat through
5. Spoon the filling on to the pancakes, and sprinkle with nuts and serve
