Ingredients
For the bread:
1 orange
115g butter
160g Duerr’s Easter Orange Marmalade with Dark Chocolate
375g plain flour
100g caster sugar
1 tablespoon baking powder
1/2 teaspoon salt
110g chopped pecans (can change to dried fruit or half fruit & half nuts if preferred)
2 large eggs
118ml milk mixed with the juice of half an orange
For the orange glaze (optional):
1 cup icing sugar
1 – 2 tablespoons orange juice
Method:
For the loaf:
1. Preheat the oven to 180°C (350°F).
2. Lightly grease a 9×5” loaf pan.
3. Grate the zest from the orange. Cut the orange in half and squeeze the juice from one half into the milk. Reserve the other half for the orange glaze, if using.
4. Place butter and Duerr’s Easter Orange Marmalade with Dark Chocolate into a heat-proof bowl, then either microwave or heat in a saucepan until melted. Stir to combine and allow to cool.
5. Mix together flour, sugar, baking powder and salt in a large bowl. Add the pecans to the bowl to coat with the flour mixture.
6. In a separate bowl, beat together the eggs with milk/orange juice mixture.
7. Alternately add the buttered marmalade, egg mixture, and orange zest to the flour mixture. Stir until combined, but do not overmix.
8. Pour the bread mixture into the greased pan. Bake for 50 to 60 minutes, until a knife inserted in the center comes out clean.
9. Allow to cool before serving.
For the orange glaze:
Whisk the orange juice together with the icing sugar until it forms a drizzling consistency.
Put in icing bag and drizzle over the bread.
