Summer is here and it's time to get the barbecue out with these light and tasty low carb recipes from the New Atkins Nutritional Approach. The healthy recipes work well at a summer BBQ, family picnic or simply for al fresco dining with friends.
Best of all, the recipes are quick and easy to make sure you can spend your time enjoying the sun rather than in stuck in the kitchen.
Ingredients
- 150g courgette
- 1 red bell pepper
- 12 cherry tomatoes
- 125g halloumi
- 5 tablespoon natural yoghurt
- 1 teaspoon ground cumin
- 2 tablespoon olive oil
- 1 tablespoon lemon juice
Method
- Preheat the grill. Put the courgette, red pepper, tomatoes, halloumi, yogurt, cumin, olive oil and squeeze of lemon in a large bowl and mix together.
- Push a lemon wedge into each of the eight metal skewers, then divide vegetables and halloumi equally.
- Grill the kebabs, turning regularly, for 8-10 mins.
