Summer is here and it's time to get the barbecue out with these light and tasty low carb recipes from the New Atkins Nutritional Approach. The healthy recipes work well at a summer BBQ, family picnic or simply for al fresco dining with friends.
Best of all, the recipes are quick and easy to make sure you can spend your time enjoying the sun rather than in stuck in the kitchen.

Ingredients
- 50g Atkins penne pasta
- 5 cherry tomatoes
- 100g courgette
- ½ a red pepper
- 2 spring onions
- 200g chicken breast (diced and grilled)
- 2 tablespoons fresh basil
- 2 tablespoons extra virgin olive oil
- 2 tablespoons parmesan cheese
Method
- Cook the penne pasta as directed and set aside.
- In a bowl mix the cherry tomatoes, spirulised courgette, chopped red pepper, chopped spring onion and chicken breast.
- Toss with extra virgin olive oil and top with basil and parmesan and serve.
