Italian Tuna And White Bean Salad

Italian Tuna And White Bean Salad

Preparation time: 10 minutes

Cooking time: about 2-6 minutes

Ingredients:

  • 50 g green beans, ends trimmed and halved
  • 2 teaspoons olive oil
  • 1 teaspoon grated lemon rind
  • freshly ground black pepper
  • 2 x 150 g tuna steaks
  • 125 g baby plum or cherry tomatoes, halved
  • 2 teaspoons capers, rinsed
  • 400 g cannellini beans, in water drained
  • 8 pitted black olives
  • 3 tablespoons Newman's Own Italian Dressing

Method:

  1. Cook the green beans in a pan of boiling water for 3 minutes. Drain and refresh under cold water.
  2. In a small dish, mix together the oil, lemon rind and seasoning. Add the tuna and turn to coat.
  3. Heat a griddle pan over a high heat, add the tuna and griddle the tuna for 1 minute each side for rare, 2 minutes each side medium or 3 each side well done.
  4. Place the green beans, tomatoes, capers, cannellini beans and olives in a bowl. Drizzle over the Italian dressing and gently toss all the ingredients together. Divide between 2 plates, then top with the tuna. Serve immediately.
