Ingredients:
- 50 g green beans, ends trimmed and halved
- 2 teaspoons olive oil
- 1 teaspoon grated lemon rind
- freshly ground black pepper
- 2 x 150 g tuna steaks
- 125 g baby plum or cherry tomatoes, halved
- 2 teaspoons capers, rinsed
- 400 g cannellini beans, in water drained
- 8 pitted black olives
- 3 tablespoons Newman's Own Italian Dressing
Method:
- Cook the green beans in a pan of boiling water for 3 minutes. Drain and refresh under cold water.
- In a small dish, mix together the oil, lemon rind and seasoning. Add the tuna and turn to coat.
- Heat a griddle pan over a high heat, add the tuna and griddle the tuna for 1 minute each side for rare, 2 minutes each side medium or 3 each side well done.
- Place the green beans, tomatoes, capers, cannellini beans and olives in a bowl. Drizzle over the Italian dressing and gently toss all the ingredients together. Divide between 2 plates, then top with the tuna. Serve immediately.
