Ingredients:
For the meatballs:
- 450g minced beef
- 120g breadcrumbs
- 4 tbsp each parsley, coriander and chives,
- plus extra to garnish
- 1 egg, beaten
- 4tbsp olive oil
- 1/2 tsp salt
- Black pepper
For the sauce:
- 1tbsp olive oil
- 1tbsp very lazy garlic
- 1tsp very lazy red chillies
- 2 tins chopped tomatoes
- 1 tsp fresh thyme, chopped
- 1 chicken stock cube, crumbled
Method:
- In a large bowl, mix together the beef, breadcrumbs, egg, herbs, 1/2 teaspoon of salt and some black pepper. Use your hands to shape into meatballs.
- Heat up the olive oil in a large frying pan (for which you have a lid) and sear the meatballs well on all sides for about 5 minutes (or until golden). Remove from the pan and set aside. Pour away the oil and wipe the pan clean.
- Place the remaining 1 tablespoon of olive oil, very Lazy Garlic and Very lazy red Chillies in the pan and cook for 2 minutes. Add the tomatoes, thyme and stock cube and cook for 5 minutes on a high heat.
- Add the meatballs back to the pan and simmer gently, covered, for 5 minutes, or until meatballs are cooked through. Serve sprinkled with extra herbs.
