It’s the time of year when we’re all on a mission to get healthy and all beach ready for summer, if we ever get one!
This spinach and feta tart is really tasty and will be loved by all the family, making meal times a little easier to cope with.
Here’s what you’ll need and how to make it –
Spinach and Feta Tart
Ingredients:
1 sheet of puff pastry
2 tsp olive oil
1 medium onion, thinly sliced
2 tsp Gourmet Garden Garlic
500g Spinach
100g Feta cheese
2 eggs
100g yoghurt
1 tbsp Gourmet Garden Basil
Method:
Grease a 23cm pie dish and line with puff pastry. Prick pastry all over. Bake pastry for 10 mins at 180°C. Press pastry lightly to flatten.
In a large fry pan, heat olive oil. Cook onion and Gourmet Garden Garlic until onion is soft. Cook roughly chopped spinach until the spinach begins to wilt.
Remove dish from oven. Spread crumbled cheese over base, top with spinach mixture. Whisk together eggs, plain yoghurt and Gourmet Garden Basil, pour over the spinach mixture and bake for 25 minutes at 180°C.
Serve hot or cold with salad.
