It’s Pancake Day! We all like to celebrate by stuffing ourselves full of pancakes but many of us would like it to be guilt free.

Here’s what you’ll need and how to make it –
Ingredients:
115g wholemeal flour
Pinch of salt
2 whole free range eggs
200ml unsweetened soya milk. Alpro is my personal favourite
80ml water
50g butter
To serve, add 100% pure Canadian maple syrup and a dash of lime juice .
Method:
Mix the flour and the salt in a large mixing bowl. Make a well in the centre. Whisk together the eggs and the milk and stir into the well until you have a thick smooth paste. Warm the water with the butter until the butter is melted, then whisk into the batter. Set aside for 10 minutes.
To cook, heat a non-stick pan over a medium heat. Take one sheet of kitchen towel and dab with oil. Run this around the pan to ensure that there's the smallest of coating of oil. Pour in a ladle full of your pancake batter, cook for 60-90 seconds and then flip. Cook for a further 60 seconds on the other side, then enjoy with maple syrup and a squeeze of lime juice.
