It’s been created by manyfacesofpotatoes.co.uk and adds some delicious fruity flavours to the classic potato salad.

Fruity Potato Salad
Prep time: About 10 minutes
Cook time: About 15 minutes
Serves: 4
Ingredients:
500g salad potatoes (such as Charlotte)
1 ripe mango, peeled and sliced
4 spring onions, sliced
100g strawberries, hulled and quartered
4 gem lettuces, quartered
Dressing -
100ml fruit smoothie (eg. kiwi, apple & lime)
2tbsp extra virgin olive oil
Method:
1. Scrub the potatoes and cut into quarters.
2. Place in a pan and cover with boiling water.
3. Bring to the boil and simmer for 15-20 minutes (or until tender). Drain and allow to cool.
4. Toss together the mango, onions and strawberries.
5. Place lettuce onto plates. Top with potatoes and fruit, then drizzle over dressing.
