Ingredients
450g/1lb ripe tomatoes, sliced or cut into wedges
2 large handfuls fresh basil leaves
55g/2oz parmesan cheese, freshly grated
55g/2oz flaked almonds, toasted
2 cloves garlic, peeled
150ml/5fl oz olive oil
Salt and feshly ground black pepper
Method
1. Put the basil, cheese, garlic and nuts into a food processor and whiz together.
2. Keep the motor running and add the oil gradually to get a thick, bright green paste. Season with salt and pepper.
3. Put the tomatoes in large bowl and toss in the pesto. Allow to stand for 20-30 minutes at room temperature to allow the flavours to develop
