Cheesy Stuffed Chicken

Oats can be seen as a superfood, as their health benefits are numerous, from their cholesterol reducing properties, as well helping to prevent cancer. They'll also help to keep you fuller for longer, meaning you'll need to eat less. 

So, shouldn't a food that has that many nutritional properties be eaten at a meal, other than breakfast? Ireland’s leading oat producer Flahavan’s has produced a range of recipes that make the most of oats.

Cheesy Stuffed Chicken
Serves 4

Ingredients

  • 50g Flahavan’s Irish Porridge Oats
  • 50g spinach, chopped
  • 75g Boursin cheese
  • A few basil leaves, torn
  • 4 chicken breasts
  • 1tbsp olive oil
  1. Preheat oven to Gas 4, 180C, 350F.
  2. In a bowl mix together the oats, spinach, Boursin and basil. Season with plenty of salt and pepper.
  3. Using a sharp knife, cut through the length of each chicken breast, so that one edge remains intact. Open each one out and flatten a little with a rolling pin.
  4. Spread the spinach mixture onto half of each flattened chicken breast, fold over the other half of the chicken and secure with a cocktail stick.
  5. Heat oil in a large frying pan. Add chicken and fry for 5 minutes, turning half way, through, so that chicken is golden on both sides. Transfer to a roasting tray and roast in the oven for 10 minutes until chicken is completely cooked. Serve with roasted cherry tomatoes.
