Fried rice (2 people)
Ingredients
2x 125g bags of boil in the bag rice (use long grain for best results)
2 eggs
Meat/fish (optional): chicken fillet, ham, pork, prawns
Frozen peas
1 onion
Beansprouts (optional)
2 tsp sesame oil
2 tsp soy sauce
How to make
Cook the rice, drain and leave to go cool.
In a jug, mix the egg and put to one side.
Fry the meat and vegetables in sesame oil before adding the rice. Mix together and season with soy sauce and salt/pepper.
Pour the egg mixture over the rice and toss until the egg is cooked (about a minute)
After stirring it all together, cook for a further two minutes until hot and then serve.
Tip: This meal goes well with sweet and sour sauce which you can put in a dish and serve as a side.
Sweet and Sour Sauce
Ingredients
3 tbsp white wine vinegar
2 tbsp brown sugar
2 tsp tomato puree or ketchup
3 tbsp sherry
2 tsp soy sauce
Small clove of garlic
2 tsp cornflour and 4 tsp water (use more or less depending on how thick you want it)
1 green pepper
1 onion
Pineapple
How to make
Cut the pepper and onion into medium sized squares and fry in a pan until soft.
Add the garlic, white wine vinegar, brown sugar, tomato puree/ketchup, sherry and soy sauce.
Stir together and leave to simmer for a minute before adding the desired amount of cornflour and water (the thicker the sauce, the more it sticks to the chicken).
A few minutes before serving, cut pineapple into chunks and add to the sauce.
Sweet and Sour Chicken (2 people)
Ingredients
2 chicken fillets
Groundnut or vegetable oil
Batter mix: 85g plain flour, 1 tbsp cornflour, ½ tsp fine sea salt, 200ml of water.
Heat the oil in a pan or in a deep-fat fryer.
Cut the chicken into small chunks, cover them in the batter and fry them until they’re cooked through/golden.
Place on some kitchen towel when cooked to remove excess oil.
Serve with sweet and sour sauce and rice.
Fruit Fritters
Ingredients
Bananas, apples or pears.
Vegetable oil
3 tbsp plain flour
1 egg (beaten)
Sugar
Cinnamon (optional)
Tbspn of sesame seeds (optional)
How to make
Make a batter using the flour, egg and a splash of water. Also begin to heat the oil in a pan.
Cut the fruit into chunks and dip them in the batter. Place into the oil when it’s boiling hot and fry until golden (about 3 minutes).
Remove and place on kitchen towel to drain.
Tip: For added flavor you could cover the fritters in sugar and cinnamon and/or sesame seeds. To do this, combine the chosen ingredients on a plate and then roll the fritters in it shortly after removing and draining them
